We hope you all had a great Thanksgiving holiday. The farmstand was bustling right before the holiday and it was great to see so many of you come in for produce and turkeys. We have a few turkeys (large ones) left and may also have a few extra meat shares. We will probably be taking Christmas ham orders - we're in the process of researching the best provider of hams. We'll send out another email soon once we do an inventory of our existing meat, and have found a good source of hams so stay tuned..
 
Survey results are in and we've received some great feedback and suggestions. If you haven't done the survey yet, please do so soon. We will share some of the responses and changes in a future newsletter. 
 
Please come by and visit the farm. We're still harvesting tons of veggies (spinach, greens, carrots, beets, leeks, turnips, kale). We have hot soup and are open Wed - Sun from 9am - 5pm through Christmas, then Friday, Saturday and Sunday until May. We have converted the greenhouse into a temporary, rustic "cafe" with picnic tables, so feel free to bring the kids for a snack while you shop.

Spinach is the most widely used dark leafy green in this country and it thrives in cool, moist soil. It is related to beets and Swiss chard and originated as a wild vegetable in the Middle East. It's high in chlorophyll, vitamins A and C, all best retained without cooking.  Here on the farm, we've been consuming tons of it lately, and have developed a delicious way to get Anson and Phoebe (Farmer Andrew's kids) to eat it.  We thought those of you with children might be interested in trying our recipe:
 
Creamy Spinach Sauce
1/2 bag of Green Meadows Farm Spinach
about 1/2 cup broth
3 Tablespoons cream cheese
 
Rinse the spinach and place in a pot with broth. Place a cover on the pot and boil until just wilted.  Put spinach and broth in a food processor and blend. Add cream cheese and blend until smooth. This sauce is terrific over brown rice. We add finely chopped cooked veggies and diced chicken. The kids really love it! Adults do too.

We had a great response to our Thanksgiving share and are offering a special $40 Christmas Share to those not part of our winter produce co-op.  Please sign up and at the farmstand, we can accept cash or check. Pick up will be December 21st, 22nd or 23rd.
 
We are also offering pie pre-orders through Ever So Humble Pies, a small all natural pie company located in Walpole, Massachusetts. We have been very happy with their attention to quality ingredients and exceptional taste. Feel free to tell your family you baked it yourself!
