| Farmer Andrew's Update
Hot days have stressed the crew and the crops. The heat has forced the tatsoi, spinach and arugula to bolt (flower early). Not to worry, the next succession of these greens is ready to harvest so there should be no interruption in the harvest schedule.
Distribution starts next week, for those who missed the orientation, feel free to ask questions. If you have forgotten your pick up day, call our office at 978-468-3720. You may come any time between 9am and 7pm to pick up your produce on the day you've signed up for. You are also welcome to come back any day of the week for pick your own (so if it's raining or extra hot, come back later that week). We only ask that you stick to your chosen pick up day and not switch days. This ensures that we'll have enough produce for everyone signed up for their specific day. If you plan on being out of town, feel free to send a friend or neighbor to pick up your share that week.
Lots of seedlings for sale - including sun gold cherry tomatoes, romas, amish paste, brandywines, striped germans, san marzanos, and many more. We plan on finishing the plant sale by the end of the month.

Lamb Event Saturday, June 14th at 10am
Please join us for "Lamb Day" at the farm this Saturday, June 14th from 10am - 11:30am. Because of where we keep them, the sheep are not always easy to visit, so this special day is for families to get a close look at our newest little lambs. This year we have several breeds of lambs including Dorset Horned, Southdown, Cheviot (a rare breed from New Zealand and pictured here), and one Border Leicester (like the breed from the movie "Babe")
We'll have spinning and carding demonstrations, hayrides to visit our lambs, stories and even locally produced sweaters for sale. $5 per person. Reservations are requested, sign up at the farmstand.

Lambsquarters
We are now harvesting some of our own crops including Lambsquarters. The leaves and stems are edible and absolutely delicious, with a flavor that can be compared to spinach or chard with an earthy, mineral rich taste. It's difficult to describe, but if you enjoy leafy greens such as kale, collards, and spinach you'll love lambs quarter and enjoy the change of pace provided by its distinct flavor.
 When cooking lambs quarter the easiest preparation is to simply steam the leaves and stems in a small amount of water until tender. The greens will cook very quickly and turn a dark green color as they shrink down during cooking. The cooked greens are delicious just as they are with no additional seasoning or flavoring necessary. The young leaves and smaller stems can also be eaten raw in salads. Or you can experiment by substituting lambs quarter for spinach or chard in some of your favorite recipes.
It is a good source of Niacin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin K, Thiamin, Riboflavin, Vitamin B6, Calcium, Potassium, Copper and Manganese.
Ten Ways to Prepare Lambs Quarters (by JJ Murphy):
1.Raw: Chop young leaves or tips of older plants raw in summer salad or for taco topping. 2. Steamed: Eat lamb's quarters plain or with your favorite dressing. 3. Sautéed: Use olive oil and add onions, garlic or mushrooms. 4. Soup: Pick your favorite hot or cold soup recipe and substitute lamb's quarters for spinach. 5. Quiche: Or even an omelet - this is delicious with eggs and cheese. 6. Lasagna: For those who add spinach to lasagna, lamb's quarters is a real treat. 7. Soufflé: Use lamb's quarters for a memorable dish. 8. Pie: Lamb's quarters makes an excellent spanakopita or Greek spinach pie. 9. Bread: Got a favorite spinach bread recipe? Try it with lamb's quarters. 10. Frozen: Plunge leaves into boiling water, one minute after water reboils, remove, cool and freeze for later use. |
